Peas Pulav

#PeasPulav : I made this pulav for the first time a month back and since then have made it so often and it comes out perfectly each time. Made this for couple of my German friends as well and they just loved it. The recipe is so easy and hardly requires any preparation time other than chopping onions.

Peas Pulav

Ingredients :
Basmati rice                            - 1 cup
Peas (frozen/fresh or canned)   - 1/2 cup
Butter/ghee                             - 3 tbsp
Green chilly                          - 6 (slit length wise, can reduce if you do not want it to be spicy )
Onion                                    - 1 big ( roughly chopped )
Ginger & garlic paste               - 1 tbsp
Jeera                                     - 1& 1/2 tsp
Bay leaf                                 - 2
Cinnamon stick                       - 1
Maze                                     - small pieces
Salt                                       - To taste
Water                                    - 1 3/4 cups

Method:
1 . Soak rice for minimum 20 mins to 45 mins.
2. Heat butter or ghee in a cooker (can use a kadai or any other vessel with a lid). Once hot add jeera, bay leaf, cinnamon, mace and let it crackle for around 30 seconds.
3. Add green chillies and saute for a few seconds, then add sliced onions. Make sure the heat is on medium, we dont want the onions to turn too brown.
4. The onion just has to start browning when ginger and garlic paste is to added and sauted for another minute.

5. Now add the peas , if using canned peas make sure to drain the water completely. Once the peas is combined with the onions add the drained rice.
6. Fry the rice for 3-4 minutes till it starts to turn white, make sure that it doesn't stick to the bottom of the pan.

7. Add 1 and 3/4th cups of water and salt and close the lid. Cook on high flame.

8. If using pressure cooker turn off the heat after 3 whistles and once the pressure is released use a fork or knife to fluff up the rice.

Garnish with coriander leaves and serve hot with raita or any vegetable gravy of your choice.

Tips : Can make this dish with dried peas, which has to be soaked overnight and pressure cooked before being used in the recipe. But the result with fresh or frozen peas is better.
